I bought an extremely cheap and sharp vegetable cleaver from a thai grocery store. Thing looks like a murder weapon, it was 5 bucks and has lasted about 3 months so far with no sharpening. It's great.

I've had good luck with a set of Henkels. 15 years old and sharpened to the point of a pending accident once a year.

i have a set of wustoff knives i like. it's critical to hone the blade regularly with one of those rods to maintain the fine edge that actually does the cutting. your blade will stay sharp for years if you do this.

I was going to get some dope ass knives, but then I thought better of it. I am usually buzzed when I cook, so the possibility of cutting myself goes way up with dope ass knives. And since I'm buzzed, I cant be all irresponsible and driving myself to ER. Yup, that was my thought process in talking myself out of it.
