I picked up a shichirin from a hardware store in Japan town in Sf. Loved it
At the end of the day though, it’s all about the right type of charcoal. You need to find a supply of Binchotan. It’s spendy, but it lasts a while if you extinguish it after you finish grilling.

The electric one is kinda nice but you don't get the wood smoke.
