Write an invoice with an offer to settle it out of court. Their lawyer will tell them to accept it. Also fix a deadline for payment so they have to a) accept payment or b) contact lawyer who will tell them to better pay.
If they do not react after your deadline (make 2 weeks), write another letter giving them one week to react, then get a lawyer.
Also document it, make screenshots or whatever, get a witness who is not a family member, a lawyer is always the best witness you can get.
Ripping off someone's work is not acceptable between businesses and you should let them feel that.
