Working in other countries (Non USA)?

Say you go on a trip to Germany on vacation for two months.
If you find a job or a studio you want to work at, can they just sponsor your work papers?
Am I legally allowed to get paid or stay longer than 6 months without papers?
Is it easy for them?

Different countries have different amounts of times your allowed to stay without papers (just with a passport), but I think to "officially" work in another country, you need a work visa, and sponsor.
I just took a job in Amsterdam with the company sponsering me... not sure it was cheap... they have lawyers to handle it.Perhaps they hire you as a contractor or vendor? And you just work on site? That way if you're a vendor, you might not need a visa... but it will look a bit odd for you to keep coming to the country, staying for 3 months, leaving for 2 days, and returning...
