Let's say I have an idea for a book about logo design. Along the lines of the Los Logos series, let's also say.
Whose permission do I need to include a particular logo? Assume it's trademarked and all that.
I figure it's either "everyone and their lawyers'" or "nobody because of some copyright law thing".

handling permission and licensing for the many logos must be a full time job for this project.

usually the publisher contacts the designer or agency that's behind the logo, ask for submissions and send a complimentary copy after it's published.
no royalties, and client/ company represented by the logo in question never knows / is not interested until the designer comes to them with the book super stoked about the logo gaining some recognition. company still doesn't care (maybe a little)

^ Is that only in the case of submission-based logo anthologies?

maybe more invite only based logo anthologies.I think submission based is open to receive whatever a stream sends, and then filtrating content. I believe this is the case of Los Logos series, where you as a designer have to pay to submit your work (even if it doesn't get published).

Are there no non-invite/non-submission anthologies?

I have a book that documents / analyzes branding progression from a few companies (only in a couple of chapters) big companies like nike/ pepsi/ shell/ etc
I'm sure the owner or designer needs to know about the logo being featured on a book. Specially if you are going to profit from it.
But, "un-officially" speaking.. if you are going to make a small number like 500 copies, and you don't really advertise to much, you can probably get away with publishing whatever you want, but if your venture becomes a success, then big corp will send cease and desist notices, and then maybe royalty requests.
I mean..
you can buy banksy frames at the LA swap meet...
REALLY CHEAP TOO!
