The great part of this app is that it should reduce the hassle for the bartender. The actual transaction is handled through the phone so all they do is bring it out. Not to say there won't be any ramp up time for learning, but if you know how to use an iPod, a bartender will only be processing more orders a night and hopefully get more tips out of it.
I could see it being interesting for hot bartenders who get more tips just based on how they look. Since you don't necessarily see them first, you might give your normal tip instead of the 'drunk maybe she'll like me if I add a dollar' one.
