i have tried to search for benchmarks showing the difference between 4gb and 8gb in apps like photoshop, after effects and c4d, but its hard to find any info like that.

Dont forget it depends on the memory bandwidth of your cpu, some are dual memory bandwidth, so 2 sticks of ram are best.
Some or triple bandwidth, so 3 sticks are best.
and for you geeks, dont forget, the more ram you have the more difficult overclocking is, due to the strain put on the north bridge of your mother board.
