    Start with politeness and go from there, you want to be careful. but set a line in the sand of your tolerance of days you can go without pay. and try to have him commit to a payment day. diplomatically and professionally.

    You have any record that you are working?
    start saving evidence for later. just in case. Technically he doesnt own your work without money exchange unless you signed your life away. you can always request him not to use it. in worst case. not sure the on the laws are, where you are located relating to copyright, payment etc.

    Keep your cool and have him commit to payment time. etc. You know if he passes the deadline, he is full of it. use your communication skills, some psychology based off feeling out your boss. see what he says.
