yep, my vote has to go to david Gilmour and his solo for Comfortably numb.
other notables would be Alex Lifeson..a lot of his work has been pretty amazing too...technically very good, and also not too showy...
the best kind of solo i think is one that improves the song, and makes the song more meaningful in some way, ....
there's a great story in Frank Zappa's auto biography about what he thought of some solo's..particularly some by the guys he played with...he described it as 'wheedely wheedely wee, point the guitar to the sky like it was your dick..."....at onen point he approached one of his guitar players on stage while the guy was soloing and whispered to him...'dude...you're wacking off with that thing, and we ALL know it..."
hahha..damn that zappa was a genius...helluva guitar player too in his own right..if you ever need a real gut busting laugh, i encourage you to read 'the real Frank Zappa'
