Clipping Path

I have some products shots, (shoes) and I was asked to do clipping paths before I bring them in to quark.
Do I do that in PS or AI?
and how?
I never done this beofre..

Use PS. It's the Pen tool and will allow you to add points around the image. The outline it creates is in the 'paths' layer and you can use this to add a mask to the layer, ie block out the background and only show the shoes.

on the eps options,
should I click something or leave it like it as default?
(preview, encodig, hlaftone, transfer, postcript,etc)

When you save the eps, don't use JPEG Preview, (it messes with some rips) and leave the items below unchecked.
