How about the manual ?
when you need specific calibration on CMYK i prefer to do those tweaks in Photoshop when the graphic is complex.CS2 will make it easier where you can do it without rasterizing your vectors but you will have to wait a bit longer for that.

If it's separation for none-CMYK prints you should look into Multichannel in PS and spot colors. you will already have to separate it on the vector level though which is still pretty much manual but there are enough standard features to help in this process.

i don't think i've ever typed "RTFM" before but i guess there's a first time for everything.

whats your issue> I dont know what his goal is or what his work contains, but the aspects of my mine forces me to handle it as raster in final stage so any illustrator elements get dumped in PS too for color correction. I guess it's unconventional but i assumed he needed the extra coontrol over his printing plates that i used.
Or maybe he simply doesnt know how to switch color modes but i doubt it.

better to let the printer do it. plus, you can color correct til your blue in the face but color can (and usually will) change once it's on press anyway.
