If you want to save iPhone photos as JPEG, you can go to the Settings app to change your camera settings.
Go to Settings and tap "Camera."
Tap "Formats" and choose "Most Compatible."
Take a photo with your iPhone camera and now you can see the photo is saved in the JPEG format.

If your mac no longer mac will update the operating system there are ways around that with this guide on OpenCore.
Haven't tried it myself, but know a few colleagues who have done so.

Open source graph/data viz web app. Load your data sources in and pick your graph type/s. It spits out svgs so you can make them look how you want with vector editing tools. You can also grab the whole project off github and run it locally - handy if graphing confidential data (it runs browser side anyway but good nonetheless).
No more shitty Illustrator or Excel graphs
