my brother-in-law designs and builds SIP homes. i looked at one he was working on a few years ago, was pretty insane. they end up being air-tight, so they have to have air exchange systems. the place had some crazy stuff, like a system to capture the shower steam and re-use the heat. certainly wasn't off the grid though, but it's the way to go if you want a super energy efficient place.
