If you've approached a client and they ask this question, you've done a poor job explaining/selling your services. Try again.
If a client asks you this question, they want to be sold. They see value in what you do, but have trouble articulating it. Sell them.
The answer to this question, of course, is that the work isn't simple. There's no such thing as an easy logo, illustration, layout; a professional makes it look easy.
As others have pointed out, owning a hammer doesn't make me a carpenter. Even if I know how to swing it.
