This might be a dumb question but Im trying to put the size of 16'x20' into illustrator but it only allows up to 227 inches.... Obviously 20' is 240 inches so is there away around this? Or Im I just completely missing something...

it's vector right? Why not just scale up from something proportionally smaller? Would probably speed up loading / working with the file.
I think if you're going that big you need to work in PSD - large doc format (I think).

Aye, I think you'll have to scale down, sadly.
I do large scale stuff at 10% then scale individual components back up for output.
I'm sitting here, learning AutoCAD for this, and a few other, reasons.

I agree, design at 1/4 size. Divide everything by 2 and create an 8'x10' (96 in x 12 in) file. Also check with the printer.

no print shop or vendor outputting at that size expects artwork at full scale.
1:4 or easier 1:10 is totally acceptable.
