Hanalei Bay, that place is awesome! And there is some great snorkeling at beach on the way there. Have fun!

Get a permit near the airport and hike the Napali Coast. Also, on the west side of a island, there is a beach way way out there, like down a 20 mile dirt road that is just epic. Naked hippies, no food or anything so bring enough gear to stay the day.

If you surf, try to get on the Navy base on the west side called: "Barking Sands" surf a spot called Major's Bay!
There are chickens and roosters all over the island too, don't step on em'
Dukes is fun too, it's not a tourist trap like it is on Oahu.

Go to Hanalei Bay side of island and stay there. So amazing.

I've been 3 times during the last 3 years, it's beyond epic. This book is the "bible" of Kauai, and will tell you all the cool spots. The locals want to literally kill the author for giving away the island secrets. Definitely try to get in on the NaPali coast hike, even if it's only to Hanakapai beach > to secret falls. Musts: Kipu Falls, Lumahai Beach, Shipwrecks, kayak the Hanalei river into the bay, sushi at Dolphin, Shave ice at wishing well, Puka dog in Poipu, best snorkeling at Lawai beach, Mermaid in Kapaa, Moloa'a beach, Hideaways...goes on and on. Get a car and explore, the Island is tiny. And most importantly, be kind to the locals.

Just went to Kauai in May. AMAZING place. I'd move to Hawai'i if immigration would let me! Stupid immigration.
If you have the coin do the Napali kayak tour. The seas may be ramping up this time of year but that makes it way more fun!!! About 7 hours of sea kayaking that is ranked the best sea kayak tour in the world by National Geographic.
Hike the Waimea canyon. There are a few parts to it and you can make it a couple day excursion if you want. At the bottom of the Valley there is the Waimea brewing compeny. Wicked MicroBrew
Po'ipu is great beachland but more commercialized. Is what it is but still worth checking out for chillout time.
Hanalei Bay! Awesome area. Go to the original Quicksilver store. It is still family run.
We stayed just south of Kapa'a. Nice little town but I wasn't as stoked about it as other parts of the island. Great middle point for visiting north and south. We used Lonely Planet for a lot of our plans.
Kayak to Secret falls.
Depending on your surf ability you have lots of options. I'd talk to locals and see what is what for the time of year.

there is a hindu monastery being carved entirely by hand there that is kinda cool - they allow visitors only on certain days i think... I wouldn't call it a Must-See but worth mentioning

Kauai is one of my most favorite places, especially the North Shore.
