Amsterdam: Things to Do

I'm going to be in Amsterdam from December 25 until January 1. Can anyone recommend must-do things that fall outside the normal touristy stops?
I'd love to hear about day trips, cool restaurants, quirky local things we shouldn't miss, neighborhoods we should check out, etc. etc.

I know this sounds lame, but you definitely have to check out the city library, its fucking amazing building and its really cool. has a nice restaurant at the top also

I'd consider getting out of Amsterdam and seeing some of the towns like Leiden which is beautiful or checking out The Graphic Design Museum in Breda - the train system is excellent .

Amsterdam is a pretty good city just to wander through and discover at your own pace

Sorry, but just come and discover your own things at your own pace, this is the essence of visiting a place. The interweb just ruins travel, you mention a place online and then everyone goes there and destroys it. Note: the train system is not that good if you have to use it everyday and it is not so cold here.

Take in some of the above and below advice;
and read up in guidebooks or internet sources if you care to;
get a little high (really not kidding about this);
go out and roam.
Explore the beauty/intimacy/history/toleranc... of Amsterdam.

Also you HAVE to find this restaurant. its is nuts. it has about 7 or so kitchens, all facing inwards.. you walk thru the middle of them and get food by the plate full.. its like a buffet, only they cook it for you while you stand there.
its unlike any place i have ever been to.

definitely go eat at Thai Bird , it's a reastaurant but it also has a snack bar version at the other side of the street
Go for the restaurant, you'll probably gonna have to wait in line, but it's going to be worth it
