How might I go about developing a site behind a subfolder of a site, then move the whole wordpress installation without totally breaking it?

Just modify the theme then it is portable. Or did you want to move posts and pages and what not?

so you want to build a site in http://www.yoursite.com/wp/
then you want to move it to http://www.yoursite.com ?

you may have to export all you pages/posts/media
install wp under http://www.yoursite.com
apply your theme
and import your files

Changing wp domain is a pain in the ass, I usually download database and do search and replace.
I found out recently you could override the domain in the database by adding this in wp-config.php:
define('WP_SITEURL', 'http://' . $_SERVER['SERVER_NAME']);

if you're only moving it to a new place on your server it's a piece of cake. you just need to change the url and blog name in the settings page of the WP admin to your new location and then move it.
read the moving wordpress link above, it explains it very well.
make sure if you have permalinks customised that you move the htaccess file which is usually invisible in your ftp app unless you make it visible.

yup this is a piece of piss - do the above.
or in future if you want to develop a site without the outside world seeing it use the maintenance plugin - allows you to put up a holding page while you are developing in the root folder.
