A good way to familiarize yourself with a subject is to check out what books are popular on Amazon. Usually there are 4 or 5 books in a given topic that have risen to the top as "the best." Then I google the PDFs for those books and download them.

Seriously, I taught myself Objective C and I wouldn't recommend it.
There are a bunch of frameworks out there, Corona is one, it uses a simple language that's similar to ActionScript 1, and it's very game focused. I've been playing around with the Flash iPhone exporter (packager) in CS 5.5 and have found it very easy to use, this would probably be my recommendation for a designer, especially if you have AS3 experience. If you've done a bit of 3D I'd go with Unity, it's probably the best iPhone game platform IMO.

I actually think Objective-C is a rather nice paradigm. I mean... I prefer Ruby and JavaScript as they're Lisp / Scheme based but hey... As far as the C's go it's not so bad.

If you are making something more graphical or gamelike then check out OpenFrameworks, it's easier if you have done Actionscript OOP before
