It's not unprofessional if you have given notice to the client.
Remember this is most likely a REACTION to an unprofessional ACTION. It's a consequence.

^ Give her 24 hours notice (on Saturday at 11pm) first.

Im running into a similar problem. The daughter bought company from parents. She had me do all this work and she agreed to contract and now she doesn't pick up phone and hasn't responded to my pay-pal reminders. I have access to website but not sure if I should take it down. I could shut off shopping cart.
- I would.waterhouse

The only thing that makes this unprofessional is that he didn't get paid (which is unprofessional by definition).

i think it is slanderous.
should just say that the site is suspended and thats it.- libelous
bulletfactory - It's only libel/slander if it's false.i_monk
- AND you KNEW it to be false at the time, and were ONLY publishing it to damage the reputation of the other party.mikotondria3

Best be very, very careful about how you handle this type of thing. Web designers seem to like the idea that they can "force" something (even when they are clearly in the right).
I've talked with my lawyer about this in depth and been told that you could easily be sued, both for loss of business and possibly worse. That would easily result in you owing them more than they owe you.
Not right, for sure, but people need to be careful.
[if you have this explicitly detailed in your contract, then that's a different deal altogether ]

how long did they wait before putting that up??

It would be great if you had put in your contract that you can do what you've done. That way if he gets pissed off and threatens murder to you, your family, and/or your pets or even your friends, you can show the cops that he did in fact agree to what you have done.

YES!! HAHA!
yeah sure, not professional and all that shit BUT is it professional to refuse to pay for work done??? Fuck no! About time...
- It's not professional to NOT get paid.
Almost by definition...mikotondria3

funny - but unprofessional.
I don't see that helping you to get paid more than once, and then never again.- With any luck, no-one would ever have to do it more than once anyway.Continuity
- If it's at this stage, he's probably happy to lose BSGL as a client.i_monk
