I have an indesign file with some images that are 600 px wide.
When I export my file as a .pdf, and view in acrobat at 100%, those images are 843 px wide.
Why is this? How do I really view at 100%?

Go to Preferences > Page Display and set the Custom resolution to your screen's resolution and you're done. This might be System setting.

And how do I save those settings in the file so I can send the pdf to other people?

You can set the PDF to display at any size, but in the end it's at the mercy of the viewer's settings.

File > Properties > Initial View

Whatever you do don't set the PDF to open at full screen. That shit annoying.
