I've worked for a printer that specialized in doing this type of work. The glossy is going to give you far better color than anything else, especially considering it's probably going to be large format inkjet. The canvas is going to dull the blues in that a lot. Same thing for the matte options. If it's a small/local printer, ask if they can print you a little sample on the paper you're leaning towards. I used to print little 5" samples to show customers color accuracy on the edge of others jobs that used the same stock if the customer wasn't in a giant rush. I won't guarantee they'll do it, but it doesn't hurt to ask.
