I think Chuds BBQ Birria tacos is a good version compared to Danish's below
Also, he and one of his followers helped design and fabricate the press he uses to make them. If they didn't weigh over 20 pounds and I wasn't half a world away, I would absolutely buy one.
- Ha! This guy is awesome, love his content.
Also, if I could, I'd get one of his Mini Chud Boxes.Continuity

A lovely table/finishing salt i came up with this morning.
In a food processor, whirl a head of peeled, raw garlic. Add two cups of salt and whirl again. At this point, add MSG and herbs (i used thyme ‘cause it goes well with everything) and give it a stir.
The resulting mixture will feel like slightly damp sand. Spread this out on a tray and dry in the oven. Low heat, door cracked. When it’s dry, whirl it again for a finer texture.
Keepin’ it in a shaker on my table. Next time i think a few drops of truffle oil added after drying would send it over the top. A chili one would be interesting as well.

I gotta thank you nairn, for accidentally turning me on to spanish cooking. Made my first tortillas espaniola today and it was delicious! Also really dig their bean stews and it’s opened my eyes to the saffron and cumin combo, which i use a lot now. I like that they have a lot of vegetarian dishes that look and taste complex while using simple ingredients and good technique.
So yeah, cheers!
- Oh! I think you put yourself on to Spanish cooking, no? It IS good though - so much cross-over with N.African and Middle Eastern flavoursNairn
- Like that Garbanzo stew you linked (and I cook every week or two) has mutated and now has cumin and turmeric in, which are both a bit 'Moorish'.Nairn
- (..also, spinach and chorizo - god, I really do like that recipe). Can't remember if you're a meatatarian, but if so, look into pinchos morunos ...Nairn
- ...that said, I've never found a recipe online that matches what I used to eat in the south, buying either the spice mix or the marinaded meat from the marketNairn
- LOVE cuminPonyBoy
- Ovo-lacto veg since age 14 actually. Come to think of it, that’s probably why i got into cooking to begin with.scarabin
- I’ve never eaten so much cumin in my life. It’s in almost EVERY indian dish i’ve learned so far. I also make a lot of mexican food, and they use it a tonscarabin

@scarabin again, from my time in Spain I found a lot of amazing dishes, one of my favourite bar snacks was papas bravas. Crispy crunchy potatoes topped with a zingy bright orange sauce. Spectacular. Also, papas a lo pobre for cooking at home, and lentejas con chorizo. The last two use a short list of ingredients, make really hearty dishes, and are dirt cheap to make. I usually brown off some chicken legs or chicken wings and throw them in with the chorizo for a bit more protein. I'm sure OBB will have more recommendations, but these are sure-fire winners for me.
